Skinny summertime treats

Avocado coconut popsicles

Ingredients

1 medium Haas avocado

2 1/3 cups unsweetened almond coconut milk

6 tbsp raw sugar (or your favorite sweetener)

1/2 cup sweetened shredded coconut

How to make it

Combine the avocado, milk and sugar in the blender and mix until smooth.

Add the coconut flakes and mix to incorporate.

Pour into the popsicle mold and freeze.

Serves 10 and each pop has: 84 calories, 5 g fat, 11 g carbohydrates, 1 g fiber, 1 g protein, 9 g sugar, 30 mg sodium, 0 mg cholesterol

 

Cherry lime popsicles

Ingredients

1 lb cherries

1/2 cup water

1/4 cup raw sugar (or your favorite sweetener)

3 tbsp fresh lime juice

How to make it

Stem the cherries and remove the pits. In a medium saucepan over medium heat, combine the cherries with the water, sugar, and lime juice, and cook until the cherries are very soft and cooked through, about 10-15 minutes. Remove from heat and cool to room temperature.

Puree the cherries and their liquid and put the mixture through a fine sieve. Pour into popsicle molds and freeze.

Serves 4 and each pop has: 122 calories, 0.2 g fat, 31 g carbohydrates, 2.4 g fiber, 1.3 g protein, 27 g sugar, 0.2 mg sodium, 0 mg cholesterol
